Grain Amaranth - the drought-beater

From weed to wonder crop
In 2010, Alice Josphat planted a trial plot of grain amaranth on her farm in Lugardi district, western Kenya. Each seed head holds up to half a million grains, and she uses the flour to make porridge and chapattis.
